Ingredients
  • 1 cup Cubed Watermelon Pieces
  • 1/2 cup Milk
  • 1/3 cup Sugar
  • 1 tbsp Gram Flour/Besan Flour
  • 3 tsp Ghee
  • 1 tsp Chopped Almonds
  • 3 stick Cardamom
Instructions
  1. Chop and measure one cup of watermelon rind. Add to a mixer jar and grind to a coarse mix.
  2. Add one teaspoon of ghee to a heavy-bottomed pan. When it melts, add one tablespoon of besan flour. Roast it in medium flame until the color changes and the raw smell goes off.
  3. Add the grounded watermelon rind to it. Mix them together until the water content evaporates and begins to thicken. Now add half a cup of milk to it. Let it cook together.
  4. Add one-third cup sugar. Let it melt and blend with other ingredients. In this stage, add ghee in intervals. Cook until the halwa stops sticking to the bottom of the pan. Flavor with pounded cardamom pods and garnish with chopped almonds. Serve warm.
Recipe Notes

  • Roasting the besan/gram flour is an important step to get a flavorful halwa. Dont speed up the process.
  • Coarsely grind the watermelon rind to get texture to the halwa.
  • In addition to cardamom , you can also add a pinch of nutmeg powder.
