Potatoes are universal favorites. Every cuisine and every family have their own favorite recipes made of this loyal vegetable that is incredibly tasty. From mashed potatoes to bakes and fries, potatoes never let our hands down. They are so versatile that they can prove themselves towards whatever method it is being treated to. Of the thousand varieties of potatoes, these cutie pies – small potatoes are great for roasting as a whole. With a wholesome blend of freshly grounded spices, these potato cuties can be had as such for an appetizer or paired up with sambar or rasam.

  • Wash and cook the small potatoes along with little salt. It takes about 12- 15 mins for it to cook depending upon its quality. Using a fork, prick the potato to check if it is cooked. If its done, Switch off the stove and drain the water. Run the potatoes with cold water to avoid further cooking. Peel the skin and set them aside.
  • Meanwhile, heat a pan and dry roast the ingredients given under the “To dry roast and grind column”. Set them aside and coarsely grind them in a mixer once they are cooled down.
  • Heat the same pan and add 2 tbsp of oil. Add the tempering ingredients given in the “to temper” table one by one. Make sure not to burn the curry leaves. Add the potatoes and toss them in low flame. Sprinkle in turmeric powder, red chili powder, and salt. Keep the flame in medium-low and toss them for about 5- 7 mins. Add the pre-roasted potatoes and toss them again. Add a generous pinch of hing and toss to coat it evenly.
  • Lastly, add a generous spoon of freshly grounded powder and toss for 2- 3 mins until it is finely coated over the potatoes. Switch off the flame and serve it as such or as an accompaniment with sambar or rice.

Notes

  • When you choose small potatoes, make sure it is of equal size. If you are unable to get small potatoes, you can use regular-sized potatoes and make cubes out of it and proceed with the recipe.
  • You can also use generous oil and deep fry it first and then toss with freshly ground spices. I would like to have a low-fat version and hence used less oil and sauteed it.
