Thengai Dosai / Coconut Dosa

Coconut is one freshly available food that is loaded with all richness. Coconut is generally considered a healthy form of fat. Being South-Indian, any Poriyal or thoran is not complete without Coconut in it. While I had plenty of grated fresh Coconut, I decided to make this super soft and flavorful coconut dosa instead of any other sweet.

We love our breakfasts and Dinner more than lunch. The ingredients need to make this dosa can be easily found in the pantry. The texture of the dosa is very soft and the flavor is out of the world. you can pair this Coconut / Thengai Dosa with any spicy chutney. Try this thengai Dosa and leave your comments.

  • Add one cup of raw rice to a bowl. To this add quarter teaspoon of fenugreek seeds. Soak it for 3-4 hrs in water. In another bowl, add 1/4 Cup of poha/Aval in water for 30 mins.
  • Wash Poha and drain water. Add them to a mixer jar. To this add half a cup of freshly grated coconut.
  • Grind them together with little water. To this add the soaked rice.
  • Grind them together to a fine batter. Transfer to a bowl. Season with salt and mix them together. Let it ferment overnight or for 6 hrs.
  • Mix the batter thoroughly and make dosas. Cover the dosa and cook. Serve hot with any spicy chutney. No need to flip the dosas.

Notes

  • Always try to use fresh coconut to make this dosa for the best results. If using frozen ones, thaw before grinding.
  • Make sure the batter is medium thin. Let it not be a runny dosa batter.
  • No need to flip this dosa.
