Sweet Corn Kosambari

Sweet Corn is a favorite for kids as well as adults. While, corn and cheese goes hand in hand, it is not liked during summer days while it is very hot. Summer days call for something that is light, fresh and satisfy the hunger. For many, the word salad is boring as it is considered to be very dull with leaves and tasteless. If you are one such person, then this sweetcorn kosambari is a must try. Kosambari is an Indian way of making salad, where the ingredients are added fresh and healthy. kosambari is usually made with carrots, moong dal or cucumbers. For a change, I tried kosambari using sweet corn and it has become our favorite, due to being tasty as well as colorful. Ingredients
  • 1 cup Sweet Corn
  • 2 stick Green Chilli
  • 1/4 cup Grated Carrot
  • 1 tbsp Grated Coconut
  • 3 tsp Pomegranate
  • 1 tbsp Coriander Leaves
  • 1/2 stick Lemon
  • 1/4 tsp Jeera Powder
  • 1 dash Salt
  • 1/2 tsp Oil
  • 1/4 tsp Mustard Seeds
  • 1 stick Curry Leaves
Instructions
  1. Add one cup of steamed sweet corn to a wide bowl.
  2. To this, add grated carrot, pomegranate, grated coconut, green chilli, jeera powder, salt and set aside.
  3. Make tempering with half a teaspoon of oil. Add 1/4 tsp of mustard seeds and curry leaves.
  4. Add the tempering to kosambari along with freshly chopped coriander leaves and lemon juice. Mix thoroughly and transfer to a serving Enjoy this fresh sweet corn kosambari.
Recipe Notes

  • If you dont have some ingredients, leave them and make this kosambari with other available ingrdients.
  • Increase the green chilli, if you like the kosambari a bit spicy.
