Spinach Murukku

Diwali means there is some deep frying that is mandated. Though sweets are super delicious, I just love the crunchy, crispy savories. From Murukku, thattai, and karasev, the savory list is my preference. How about some vegetable factor added to these crunchy savories for some goodness? Yes, I tried this SPINACH MURUKKU some days back and they were a super hit at home with kids. The color was so appealing and the murukku itself is very tasty. also, the health benefits of spinach are endless and people didn't know that the green color is from spinach. Ingredients
  • 1 cup Rice Flour
  • 1 cup Spinach ((Loosely Packed))
  • 2 tsp Roasted Gram Flour
  • 1/2 tsp Cumin Powder
  • 1/4 tsp Asafoetida Powder
  • 1/4 tsp Sesame Seeds
  • 1 tbsp Butter
  • 1 cup Oil (For Deep Frying )
  • 1 dash Salt
Instructions
  1. In a mixer jar, add one cup of loosely packed spinach that is pre-washed. Add half a cup of water and grind to a smooth paste.
  2. In a wide bowl, add one cup of rice flour, two teaspoons of roasted gram flour, a quarter teaspoon of sesame seeds, a quarter teaspoon of asafoetida powder, half a teaspoon of cumin seeds, one tablespoon of soft butter, and required salt to taste.
  3. Combine all of them together uniformly.
  4. Add the spinach puree and make them into a soft, yet non-sticky dough.
  5. Choose star-shaped mold in the murukku press. Grease the press and add murukku dough into it. Squeeze them directly in oil. Cook each side for 2 mins and drain them from oil. Allow it to cool down and store in an airtight box.
Recipe Notes

  • I have used store-bought rice flour for this murukku. You can also use homemade rice flour.
  • Instead of one tablespoon of butter, you can also add 2 tsp of hot oil to make the murukku dough.
  • Replace sesame seeds with jeera seeds if you like. In this case, avoid adding cumin/jeera powder.
