Spinach Dosa

Dosa is a daily fare in many Indian households. Apart from the regular Idli-Dosa made with rice alone, it is a bonus if we could incorporate some healthy greens too. One such healthy and evergreen hit dosa is this spinach dosa which the kids love. In addition to the rice, I have also added quinoa - a super grain for more health benefits. If you have no access to quinoa, replace it with any other millets. This Spinach Dosa has the right proportions of rice, Quinoa, dals, and topped off with healthy greens. Do try this healthy dosa and pair it with simple coconut chutney or podi.

Ingredients
  • 1 cup Quinoa
  • 0.5 cup Raw rice
  • 0.25 cup Urad Dal
  • 2 tbsp Toor Dal
  • 3 Green Chilli
  • 1 stick Ginger
  • 1 tsp Jeera Seeds
  • 1 dash Salt
  • 3 tbsp Gingelly Oil
Instructions
  1. Wash and soak rice, quinoa, and dals together for about 6 hours.
  2. Drain the water and grind them along with green chillis, ginger to a fine paste in flowing consistency.
  3. Clean and coarsely chop the spinach. Add it to the batter and grind it along.
  4. Transfer the ground batter to a vessel. Add salt and Jeera to the batter. Mix well together.
  5. Heat a dosa tawa and pour a ladle of spinach dosa batter. Make a circular motion to prepare dosas and drizzle some gingelly oil. Allow it to cook for about 2 mins and flip over to the next side.
  6. Let the other side cook for another 2 mins and then transfer it to a plate. Serve hot with any accompaniments of your size.
Recipe Notes

  • This Dosa can be made as soon as it is grounded. There is no need to ferment the batter.
  • The addition of toor dal to this dosa gives a crispy texture and Urad dal acts as a binding agent to make perfect dosas.
  • If you do not have Quinoa in hand, try replacing it with any millets or even an additional cup of rice.
