Set Dosa is a very famous South- Indian ( Karnataka) breakfast recipe, that is usually paired up with kurma or vada curry. It is very famous in the state of Karnataka, where it is usually served with coconut chutney and vegetable saagu. Set Dosai is generally served as a set of two and hence it gets its name. Set Dosai is thick, super soft, and spongy. It is usually made with rice, urad dal and poha or baking soda. The measurement of Rice to Urad dal is very important to get a soft set dosa. Traditionally it is white in color, while some restaurants add food coloring to make it appealing. Do try making this recipe and leave your comments.

  • In a bowl, add one cup of raw rice, one cup of parboiled rice, and half a cup of urad dal. Add water and soak it for 6 - 8 hrs.
  • Once it is soaked, wash and drain water. Add it to the wet grinder and grind it to a fine batter.
  • Transfer it to a container. Add required amount of salt to taste. Mix them with the batter and allow it to ferment for 8 hrs or overnight.
  • The batter would have fermented well. Mix the batter and add a pinch of baking soda. Mix the batter well and set aside.
  • Heat a dosa pan and add a ladle of batter. spread it to a thick dosa and drizzle oil over it. Cover the dosa with a lid. Once it is cooked, do not flip. Serve with kurma.


  • If you like to add food coloring, add them before fermenting or before making the dosa.
  • The measurement of this dosa is very important to achieve a soft set dosa.
  • You can also grind quarter cup of soaked poha/ Aval along with the rice and dal. In this case, avoid adding baking soda.
