Rava-Coconut Burfi

Deepavali is all about celebration. when theres celebration, theres definitely good food. How about a quick sweet recipe that does not take much time and can be made with easily available ingredients at home? Heard it right! Rava and Coconut are easily available . Add in sugar and a bit of ghee to bring in some festive feel this diwali. This Rava-coconut Burfi is very simple and easy to make under 15 mins. It also makes a perfect fit in your Diwali sweet box for friends and family.

  • In a heavy bottomed pan, add a teaspoon of ghee. When it melts, add rava. Roast for 2-3 mins until aroma comes off. Set aside.
  • Add a teaspoon of ghee and roast grated coconut for 1-2 min until aroma comes off.
  • Add half cup of sugar along with three teaspoon of water. Add crushed cardamom Let sugar melt until single string consistency.
  • Add the roasted rava-coconut to the sugar. Mix them quickly without lumps. Cook until it does not stick to the bottom of pan.
  • Transfer to a greased plate. Level it off with a spatula and garnish with almonds. While still warm, make lines to cut the burfi. Let it cool off. Store them in a dry container.

Notes

  • I have used exactly two teaspoons of ghee for roasting rava and coconut which was sufficient to make the burfi. You may add a teaspoon more if you feel it sticks to the pan.
  • I have used freshly grated coconut in this burfi. You can also use readymade desiccated coconut powder. But need to be very careful when roasting as they may burn if roasted longer.
