QUINOA DATES KHEER

Quinoa is one of the popular grain that is widely used these days. Though it originated in the South Americas , it has gained popularity in the recent few years in Indian cooking. It has much more fibre content than rice and hence people are opting for different ways to include Quinoa in daily diet.Quinoa is also available in different colors with different textures. The commonly available is the white Quinoa variety that is soft when cooked.
Quinoa can be used in Indian cuisine in various ways. One such is this Quinoa Kheer. Quinoa Kheer is an alternative for those who look on for replacements to the authentic Paal payasam. With the replacement of only rice, this Quinoa kheer tastes equally good with its creaminess and guilt-free calories. Try this Quinoa kheer with any color quinoa that is available to you. To make it healthier,I have used dates to sweeten this kheer for a different taste and much fewer calories. This combination will linger your taste buds in a hearty and healthy way.

  • Soak 9 - 10 dates in water for 15 - 20 mins. After this grind to a fine paste in a mixer jar. Set them aside.
  • Meanwhile, in a saucepan, add a teaspoon of ghee. Roast cashews and raisins.
  • In the same pan with leftover ghee, roast quarter cup of quinoa for 2- 3 mins.
  • Add one cup of water and cook Quinoa for 10 - 12 mins until they turn soft.
  • Add a pinch of nutmeg powder, quarter teaspoon of cardamom powder, left over 50 ml milk and finally roasted cashews/ raisins. Garnish with chopped dates and serve.

Notes

  • I tried this for the first time and hence cooked quinoa separately before adding milk to it. You can also directly cook quinoa in milk.
  •  Make sure to keep the flame in the medium after adding milk. It easily burns when cooked with a high flame.
  • I have used soaked dates for this kheer. If you are using dates syrup, add them at the end.
