Quinoa Dosa

Idli and dosas are the staple food for every south- Indian. These are so noble that they can be served from little children to the age-old. While rice + lentil are the key ingredients of them, it is also to be taken into account the carbos from rice. Over a year, I have been experimenting with whole grains in making idlis and dosa. One such is this Quinoa dosa which is a success at the first attempt.
Quinoa is a fiber-rich whole-grain variety that is predominantly available in the market these days. They are available in white, red, and black colors or as a rainbow blend with all of them in the same pack. Each of these has a unique texture after cooked. While white-colored quinoa is soft, the red and black quinoa gives a nutty texture. In this recipe, I have used an Organic version of rainbow blend Quinoa. These dosas are rich in fiber and I have made them three times so far. Do try this dosa and have a guilt-free meal.

Ingredients

  • cup Quinoa
  • 1 cup Idli Rice
  • 0.5 cup Urad Dal
  • 0.25 cup Fenugreek Seeds
  • 1 Salt (as needed)
  • 1 Oil (to grease and make dosa)
Instructions
  1. In a wide bowl take one cup of quinoa and idli rice each. Soak them together overnight or for 6 hours. In another bowl, soak Urad dal along with fenugreek seeds for 3 hrs.
  2. Wash the urad dal and grind them to a smooth consistency using a mixer or a wet grinder. Follow the same step for rice + quinoa.
  3. Mix these two batters together along with salt and allow it to ferment for 8 hours.
  4. After eight hours, they would have fermented. Heat a dosa pan and pour a ladle of batter in the center and spread in a circular motion.
  5. Drizzle oil and flip over the other side. It takes about 2-3 mins to cook each dosa. Serve with any chutney of your choice.
Recipe Notes

  • I used a rainbow blend of Quinoa. You can use any colored Quinoa based on your availability. They all take the same time to ferment.
  • If you do not want to add idli rice, you can replace it with brown rice too.
