Pudhina Thogayal
Pudhina/ Mint is a flavorful herb used in many cuisines. It is used in main dishes, gravies, salads, soups, as garnishing. Today i made this very flavorful pudhina thogayal . This thogayal is very appetizing with the bright color and its taste. You can enjoy this thogayal with idli and dosas. This can also be used with rice and a dollop of ghee. A side of appalam with this flavorful thogayal will make you want more. Try this Pudhina thogayal and enjoy your meal!

Ingredients
- 1 cup Mint leaves/ Pudhina
- 3 stick Green Chilli
- 1 tbsp Urad Dal
- 1/2 tbsp Channa Dal
- 1 tbsp Grated Coconut
- 1 stick Ginger
- 1 stick soaked Tamarind
- 1 dash Salt
- 1 tsp Oil
Instructions
- wash, and clean the mint leaves. In a pan, add a teaspoon of oil. Add urad dal, channa dal and green chillies. Roast them until golden.
- Add an inch of ginger to it. Now add the cleaned mint leaves and sautee until they wilt. Turn off the stove and add a tablespoon of coconut. Add soaked tamarind to it.
- In a mixer jar, add salt and the sauteed ingredients. Grind them to thick thogayal with little bit of water. Transfer to a bowl and serve with idli, dosai or hot rice.
Recipe Notes
In this recipe, I have used only pudhina /mint leaves. You can add equal portion of coriander leaves and mint leaves to make this chutney. 2. I liked to retain the color of pudhina , hence used green chilli. You can replace with red chillies instead. There may be slight change in color and taste.
