PROSO MILLET / PANI VARAGU RIBBON PAKODA

Proso millet is one of the millet variety commonly found in Europe, Indian and United States. In the United States, this millet is also used as bird feed. It is approved as human food too. Being non- glutenous and it is an appropriate food for people who are allergic to wheat. Proso millet has a good amount of calcium content that strengthens the bones. Proso millet has lecithin- an important component that strengthens the nervous system of the body. With the above mentioned benefits, Proso millet can be used in diet with Idli, dosas, salads and flatbreads. One interesting recipe that I have come up with this prosomillet/panivaragu ribbon pakoda. It is healthy, very crispy and tastes great. The cooking time for this promo millet pakoda is also less than the regular ribbon pakoda. Ingredients
  • 1.25 cup Proso Millet Flour / Pani Varagu Maavu
  • 0.5 cup Gram Flour/ Besan Flour
  • 0.25 cup Rice Flour
  • 1 tsp Red Chilli Powder
  • 0.5 tsp Sesame Seeds
  • 1 dash Salt
  • 1 tbsp Soft Butter
  • 2 cup Cooking Oil
Instructions
  1. In a wide bowl, add one and quarter cup of promo millet flour, half a cup of gram flour and quarter cup of rice flour. Add a teaspoon of red chili powder, half a teaspoon of sesame seeds and required salt to taste. Finally add a tablespoon of butter.
  2. Mix them first to form a crumble like consistency. Now add required water and knead them to form a soft and non-sticky dough.
  3. Grease the murukku press and place the ribbon pakoda mold in it. Fill the press with the dough.
  4. Heat oil in a heavy bottomed pan and once it turns hot, squeeze the ribbon pakoda directly to the hot oil. Cook on each side for 3- 4 mins and once the sizzling sounds stop, drain from oil and bring it to room temperature. Store in airtight box.
Recipe Notes

  • I have used 1.25 cups of pros millet flour in this recipe. Instead you can add 1.5 cups of millet flour and reduce gram flour to quarter cup.
  • Replace red chili powder with pepper powder if you like pepper flavor.
  • Always add half quantity of salt content for fried foods.
