PIZZA MUFFINS (Low Calorie Version)

Muffins are everyone’s favorite. Mostly sweet muffins are made for breakfast and enjoyed with a cup of hot coffee. I tried this savory muffin which is pizza flavored. Why not pizza for breakfast. Also, I made them with whole wheat flour and used less cheese to make them less calorie and yet, soft and tasty. The idea was absolutely a winning one with kids loving them. A warm pizza muffin with a hot cup of tea was our breakfast and we enjoyed this on a cold, winter morning. This can also be packed for some healthy snack option. Try this tasty pizza muffin for your breakfast and you will love this flavorful, less calorie savory muffin a lot.

  • In a wide bowl, add 3/4 cup of warm water. Add one teaspoon of salt and sugar each along with 3/4th teaspoon of active dry yeast. Let it foam up after resting for 10 mins.
  • Add 3/4 teaspoon dried mixed herbs with 3 tablespoons of olive oil. Add 2.25 Cups of whole wheat flour and knead thoroghly. Let the dough rest for 50 mins. The dough will rise by now.
  • Transfer to work surface and dust with flour. Knead again and spread to a uniform sheet. Spread generous amounts of pizza sauce.
  • Add shredded cheese over it. Roll them inwards and make a log as seen.
  • Grease knife and cut one-inch size pieces. Arrange them in a greased muffin pan.
  • Preheat oven and Bake at 400 F for 15-18 mins. Transfer to a cooling rack and serve warm. Soft, healthy, and tasty pizza muffins are ready.

Notes

  • I have used whole wheat flour to make this muffin. You can replace it with maida/all-purpose flour or a combination of both.
  • Replace dried herbs with finely chopped fresh herbs like rosemary, oregano or basil if you wish to.
