
Cilantro / Coriander Leaves is a versatile herb that is very commonly available around the world. It can be easily grown at home garden too and makes any dish flavorful. Also it is used widely in many cuisines around the world. Once such cuisine is the Mexican cuisine that I personally love due to its close taste like Indian cuisine. The cilantro lime rice is a very famous Mexican rice that is very easy to make and flavorful. It is usually served in a rice bowl along side beans, bell pepper stir fry, guacamole, sour cream and salsa.
I tried to create a Indo-Mexican rice bowl with this flavorful cilantro lime rice, and served them with Punjabi lobia beans curry, salsa, guacamole, sour cream and some home made plantain chips. This Cilantro Lime rice can also be served with Thai Curry , or over any other curries. This Cilantro Lime rice can also be made with brown rice. Try this flavorful cilantro-Lime rice and serve with accompaniments of your choice.

- I usually use Basmati Rice or any long grain rice variety to make this Cilantro Lime Rice. You can use the regular rice too. Make sure to adjust water quantity based on the rice used.
- Always use fresh cilantro leaves for best flavors.
- I add lemon zest while cooking rice for extra lime flavors. You can add if you like extra lime flavor like me.
