Lemon Idli

Idli is a tiffin for many. But to me, Idli is an emotion. Every day mornings are made bright with these healthy, beauties accompanied by chutney or sambar. It is a staple food at my house and kids love them even in their school lunches. They stay fresh as packed and taste yummy too. As the kids like them for lunch boxes, I send different varieties of Idli for their school lunch. One such is this Lemon Idli which is easy and quick to make. They taste tangy and tasty for the lunch box with crunchy peanuts and dals in every bite. This can be prepared with mini idlis like the way I did or cut the regular Idlies to pieces and proceed with the recipe. I paired it with some simple coconut chutney for the lunch box and trust me, the lunch box was wiped clean when it came back. Ingredients
  • 1 cup Idli Batter
  • 2 tsp Gingelly Oil
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Urad Dal
  • 1/2 tsp Channa Dal
  • 1/4 cup Small Onions
  • 1 stick Green Chilli
  • 1 stick Red Chilli
  • 1 stick Curry Leaves
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Asafoetida Powder
  • 1/2 tsp Salt
  • 1/2 stick Lemon
Instructions
  1. Grease the small Idli plate with oil. Add batter to each mold and steam for 4-5 mins. Remove and let them cool down.
  2. Heat a pan, add oil. When it turns hot, add mustard seeds, urad dal, and channa dal along with peanuts. Let them turn a golden color. Add red chili, green chili, and curry leaves. Lastly , add small onions and sautee till soft.
  3. Add chopped ginger,turmeric powder, salt and asafoetida powder. Toss them gently. Squeeze lemon juice and serve .
