Kuzhi Paniyaram

This that time of the year again!! Yup BACK TO SCHOOL!! After that month of vacation, kids are looking forward to the next school year. While they are busy looking for a school, teachers, and friends, the moms are hitting their heads for healthy, quick lunch ideas. If your kid is a first-timer like mine, it is always wise to stick on to simple to eat, yet tasty, colorful, and interesting foods. One such favorite food of my LO is this Kuzhi paniyaram. All you need is an appe pan / kuzhipaniyaram pan to make this. The sky is the limit to add anything to this paniyaram.

I have used some idli batter for this purpose. You can add grated beets, carrot, cabbage, tomato, onions, or any finely chopped vegetables of your kid’s choice to this batter. Prepare this kuzhi paniyaram with gingelly oil and pair it with chutney for their quick lunch. Do try this kuzhi paniyaram for an interesting lunch or snack time for kids and family.

  • In a wide bowl, add a cup of idli batter. Finely chop the onions, green chili, curry leaves and ginger.
  • Grate the carrot and set aside. Heat a pan and drizzle some oil. Once they are hot enough, add mustard seeds, urad dal, channa dal, curry leaves, green chilies and allow them to splutter.
  • Saute in the onions until they turn golden brown. Toss the grated carrot for a while and add the mixture to the idli batter.
  • Do a taste test to check the salt in it and proceed. Heat up the appe pan and drizzle gingelly oil. Once they are hot, add a spoonful of batter to each mold.
  • Allow it to cook for 1 – 2 mins until they are golden brown. Using a wooden skewer to flip over to the next side and cook until they are done.
  • Once done, transfer to a bowl and pack while they come to room temperature. Serve with any chutney of choice. This will definitely please the kids as well as give them healthy options for eating vegetables. Do try and enjoy it.

Notes

  • You can add any vegetables of your choice in this. Some choice of finely chopped vegetables includes beans, Cabbage, Peas, grated broccoli, and Bell peppers.
  •  Make sure your batter is a bit thick and not runny. The runny batter does not allow perfect paniyarams. If your batter is too thick add water in a little amount to achieve the right consistency.
