Kesar Shrikhand

Shrikand is a yogurt-based dessert that is popular in North- India. Shrikand is usually loaded with mild spices and served chilled during festivals and celebrations. It is one of the important dishes made during Janmashtami. The usual spices that are added to a shrikand are elaichi, kesar strands, rose water, rose petals, pureed mango. Each of these spices render a unique taste to the shrikand when added separately or combined among each other. In this recipe, I have used only kesar and made Kesar Shrikand. The flavor of delicate Kesar with hung curd renders a very tasty Shrikand. The key step in making shrikand is to get the right consistency of hung curd. Ingredients
  • 1 cup Curd/ Yogurt
  • 3 tbsp Sugar
  • 1 pinch Saffron threads/ Kesar
  • 2 tsp Warm Milk
  • 1 tsp Sliced almonds
Instructions
  1. In a small bowl add two teaspoon of warm milk and add a generous pinch of saffron threads/ Kesar.
  2. Take a bowl and place a colander over it. Spread a thin muslin cloth or a cheesecloth over it and add yogurt on it to strain the water. Make a small potli bag with the curd and hand it for 1 to 2 hrs.
  3. After the hung curd is formed, add it to a bowl. Mix in sugar to it and whisk together until they form a thick consistency.
  4. Add in the kesar milk to it as required. Chop almonds into thin slices and garnish the shrikand. Serve it chilled after an hour atleast.
Recipe Notes

  • I have used homemade curd for this recipe. If you have access to store-bought greek yogurt, then try to directly whip up sugar and Kesar milk to it directly. No need to make hung curd as the greek curd is thick by itself.
  •  Try your hands on altering flavors with rose water, rose petals, elaichi instead of Kesar. Each of them renders a different flavor and taste.
