KESAR RAVA LADOO

To add more joy to the celebrations, sweets and savories are prepared and shared. A quick and tasty sweet like this Kesar Rava Ladoo will definitely be a crowd-pleaser. It is easy to prepare with basic ingredients from the pantry in less time. Rava Ladoo is a traditional recipe that is prepared with Rava/sooji, - an easily available ingredient. Flavoring this ladoo with Kesar , elevates the flavor, taste and makes it more colorful. I have also added coconut to this ladoo , making it very unique and tasty. Ingredients
  • 1 cup Rava / Sooji / Semolina
  • 1/2 cup Powdered Sugar
  • 1/4 cup Grated Coconut
  • 3 tbsp Ghee
  • 3 stick Cardamom pods
  • 1 tsp Cashews
  • 1 tsp Raisins
  • 1/4 cup Milk
  • 1 pinch Kesar/ Saffron threads
Instructions
  1. In a pan, add one teaspoon of ghee. When it melts, add one cup of rava/sooji. Roast them in medium flame for 2-3 mins. Add quarter cup of grated coconut to rava and roast another 2 mins until it forms a sand consistency.
  2. Transfer to a mixer jar with three cardamom pods. Pulse them 2-3 times and set them aside.
  3. In a quarter cup of warm milk, add one generous pinch of saffron threads. Mix them and let them stand for 10 mins.
  4. Heat two tablespoons of ghee in pan. Once it melts , add cashews, followed by raisins. Roast them until golden brown and turn off stove.
  5. Add rava mix and combine with ghee. Now add half a cup of powdered sugar and mix together. Lastly, add milk in small quantities and mix them to a sticky consistency. Grease palms and roll the rava mix to make ladoos. Serve and enjoy!
Recipe Notes

  • I have used a coarse variety of rava to make this ladoo. You can also use fine rava. In this case, you don't have to pulse them.
  • For one cup of rava , I used half a cup of sugar, which was just right for us. If you like it sweeter, add an additional quarter cup.
  • These laddos seems to look soft at the first. It will harden a bit once it gets cool down.
  • Make sure to roast the rava in a medium flame for uniform roasting and flavor.
