Kale Sprouts Sandwich

A sandwich is a quick and hearty one for a breakfast or as a snack. However, loads of butter and other stuff that goes into it is definitely needed to be watched. The mom in me makes to look into the calories of it and make it a healthy one for the family. While I had a handful of sprouts leftover, I decided to use them for this sandwich. Then came the idea of adding kale to it. Kale is tagged as one of “World’s healthiest food”. It is very much rich in Vitamin B 12, one of the essential nutrients for body functions. I added carrot pieces because it is my little one’s only favorite vegetable. A very hearty, yet nutritious sandwich was ready in few minutes. We just had them as such. You can also pair with ketchup or a green chutney if you need anything.

  • Wash and roughly chop the kale greens. Chop onions, carrots finely. Wash the sprouts and set aside.
  • Heat a pan and drizzle oil in it. Add jeera seeds and wait until they are roasted. Add finely chopped onion and carrots and sauté for a while until they are half done.
  • Add the chopped kale greens and mix. Cook until they are done and add salt and pepper to it. Switch off the stove and then add sprouts. Toss them in that heat and add lemon juice.
  • Grease a Tawa in the side. Smear a little of butter/olive oil on both sides of the bread. Lay down a slice of cheese and load with sandwich filling.
  • Cover with another greased bread slice. Place in a Tawa and keep weight on top of it. Cook for a minute. Flip over the other side and cook another minute, until it is done. Serve this hearty and healthy sandwich for breakfast or any meal.

Notes

  • I have used brown bread(Whole Wheat) slices for this sandwich. You can replace it with any bread of your choice.
  •  I smeared olive oil to the sandwich to make it a healthy one. You can do it with butter if you wish too.
  •  Kale greens can be replaced with any variety of greens too like Spinach, Lettuce, or Collard Greens.
