INSTANT BAJRA/ KAMBU PANIYARAM

Pearl Millet is one of the fibrous millets. Pearl Millet/Bajra/Kambu is a boon to diabetic patients. Bajra has a very high fibrous content and tends to digest slowly. This will release sugars gradually and hence pearl millet is very diabetic friendly. Pearl Millet is also gluten-free and hence it can be consumed by people with gluten allergies. As it is high in fiber, pearl millet also promotes weight loss. Apart from Idlis and dosas, porridges, I have tried making this tasty paniyaram with pearl millet flour/ kambu maavu. Along with this millet flour, you can add any variety of chopped/shredded vegetables to increase nutritional value and make it a complete breakfast or snack. This Paniyaram is also an easy way to include millets and vegetables in kids' diets. Try this quick and tasty kambu paniyaram for breakfast or as a snack. Ingredients
  • 1 cup Bajra Flour/ Kambu Maavu
  • 0.25 cup Rava
  • 0.25 cup Curd
  • 1 tbsp Chopped Onions
  • 1 tsp Chopped Carrots
  • 1 tsp Chopped Beans
  • 0.25 tsp Chopped Coriander leaves
  • 1 tsp Green chili
  • 0.5 tsp Grated Ginger
  • 0.25 tsp Asafoetida Powder
  • 0.25 tsp Salt
  • 2 pinch Baking Soda
Instructions
  1. In a bowl, add one cup of bajra flour, a quarter cup of Rava, and quarter cup of curd. Season with salt to taste.
  2. Whisk them together along with water. Mix to avoid lumps.
  3. Make a thick batter and set it aside for 15 mins.
  4. Add chopped green chilli, grated ginger, chopped carrots, beans, onions and coriander leaves. Mix them together and add two pinches of baking soda.
  5. Grease appe pan with gingelly oil. Pour batter into each mold. Cover them and cook for 2-3 mins.
  6. Flip over the other side and cook until they are done. Serve hot with chutneys or sambar.
Recipe Notes

  • I have used pearl millet flour/ Kambu Maavu to make this paniyaram. You can replace it with any other millet flours you have.
  • The addition of vegetables is based on your choice. You can add finely chopped or shredded carrots, capsicum, beets, peas, green beans, and corn.
