Instant Badam Kheer

Badam Kheer is a favorite drink for many of us. It is very rich , tasty and soothing . It can be served warm or chilled. Either ways, it is delicious to drink. During childhood days, we used to drink chilled Badham Kheer on hot summer days. The traditional way of making badham kheer involves soaking the badam/almonds for a minimum of 3-4 hours. I have tried a minimum, quick version of this tasty badam kheer. In this Quick and instant version, I used almond flour to make the kheer. It quickened the process without any compromise on the taste and flavor of this amazing kheer. Ingredients
  • 2 tsp Almond Flour
  • 300 ml Full Fat Milk
  • 200 ml Water
  • 2 stick Cardamom
  • 1 pinch Nutmeg
  • 1 tsp Chiroti Seeds
  • 1 pinch Saffron Threads
Instructions
  1. Boil 300 ml of full fat milk with 200 ml of water.
  2. Add a pinch of saffron thread to a bowl. Soak them in warm milk.
  3. In a mixer jar, add two teaspoons of almond flour. Add 1/4 cup of water and grind to a smooth paste.
  4. When milk boils, add chiroti seeds , cardamom powder and mix until it begins to thicken.
  5. Now add sugar . Let the kheer boil until sugar dissolves. Add a small pinch of nutmeg. Turn off stove and let the Kheer cool down. It thickens more as it cools. Serve in room temperature or chilled.
Recipe Notes

  • I have added chirotti seeds without frying. If you like, roast them in half a teaspoon of ghee. Add them to the kheer later.
  • You can also add finely chopped badam to get a nutty bite in every sip.
  • You can also add almond essence if you like. I like to get the natural and subtle flavors of saffron and badam in this kheer. Hence did not add them.
