Indian Yogurt Parfait

Parfait is a French dessert which means "Perfect". Originally, thee parfaits are made of eggs, heavy cream and a layer of berries. The American version of it contains yogurt, granola and topped with fruits and nuts. Though these might be like a dessert, it is an easy go breakfast for quicker mornings. The parfait has granola that is loaded with sugars and flavored yogurt. I attempted this healthy Indian-style parfait using the desi ingredients that are easily available in every Indian household. Ingredients
  • 1/2 cup Aval/ Poha/ Flattened Rice
  • 3 tsp Thick Curd
  • 1/4 cup Milk
  • 1 pinch Nutmeg Powder
  • 1 pinch Cardamom
  • 1 tsp Almonds
  • 1 tsp Walnuts
  • 2 tsp Honey
  • 1/2 cup Fruit of choice
Instructions
  1. Place a cheese cloth over a strainer. Add three teaspoons of thick curd to it. Let it sit until water drains off. Remove the hung curd and add a pinch of nutmeg powder and a teaspoon of honey. Mix thoroughly and set aside.
  2. Wash half a cup of poha in water to remove impurities. Add a quarter cup of milk and a pinch of cardamom to it. Mix and let them soak for 15-20 mins.
  3. In a serving glass, add a layer of soaked poha followed by fruits, and then hung curd. Repeat layers with different fruits.
  4. Once the layering is done, top off with the remaining fruits, chopped almonds, and walnut, and drizzle some honey. Refrigerate it until serving.
