Gajar Pulav || Carrot Pulav

Gajar Pulav or Carrot Pulav is a very simple, healthy, and flavorful one-pot rice recipe that can pair up very well with any rich or spicy curries. The kids in our household are a great fan of carrots. Carrots are very healthy and rich in nutrients. They are a great source of Vitamin A and the carotenes in carrot are really good for the eyes in young children. Carrots when paired with coconut elevates the taste of this  Pulav. If you have kids that do not eat vegetables, try sneak peaking in this way. Do try this recipe, and enjoy with any spicy curry of your choice.

  • Soak one cup of basmati rice in water for 20 minutes. Heat a pan and add a spoon of Ghee and oil to it. Let it get heated up.
  • Add half a cup of grated coconut to it and fry until aroma comes out. Add chopped carrots to it and saute for about 5 mins.
  • Drain water from the soaked rice and add the rice to the pan. Give a good toss gently without breaking the rice. Add 1/4 tsp of garam masala powder.
  • Add two cups of water to it and cover it with a lid. Cook the rice in a medium flame for ten minutes.
  • After ten minutes, open the lid and fluff the rice with a fork. Garnish with crushed kasoori methi leaves. Serve with any spicy gravy.

Notes

  • I have used finely chopped carrots in this recipe. You can replace it with grated carrots.
  • Addition of peas is optional and you can add it to make more colorful pulav.
