Fresh Homemade Masala Paneer

Paneer is a favorite ingredient for many from kids to adults. We can make any number of dishes with Paneer from paratha to curries, sandwiches and incorporate them into rice. It is so versatile, that it can be used in any cuisine. Being rich in protein, Paneer is a very filling one. While Paneer is found in most of the stores, there is definitely a compromise in its freshness and texture. Home made Paneer is fresh and soft, and easy too. With it comes the flavoring that is added, making it more appealing to the eyes and well as a burst of flavors in the mouth. In this fresh home made paneer/ Indian cottage cheese, I have used freshly available spices and herbs to make a flavorful bomb. Ingredients
  • 1 gal Whole Milk
  • 1 tbsp Dry Mint (( Replace with 1/2 cup of fresh Mint leaves))
  • 1 tsp Fresh Crushed Pepper
  • 1 tsp Jeera Seeds
  • 1.5 tsp Red Chilli Flakes
  • 2 stick Lemon
Instructions
  1. In a heavy bottomed pan, add one gallon of whole milk. Let it heat up. Add all the spices and herbs to it. Let it boil. Keep stirring.
  2. When milk reaches boiling stage, add lemon juice from two lemons. Let the milk begin to curdle until paneer forms.
  3. Place a colander over a big bowl. Spread a kitchen towel or a cheese cloth over it. Strain the paneer through it. Squeeze till it is free of water. Place a plate and a heavy object over it.
  4. After 30-45 minutes, remove the Paneer. Paneer will be set. Cut them into blocks. Use in any dishes of your choice. Refrigerate the rest for future use.
Recipe Notes

  1. when making Paneer, always Use full fat or whole milk for best results.
  2. I have used dry mint leaves for this. If you have fresh mint leaves, you can clean them, chop into fine pieces and add it to make paneer.
  3. In addition to the mentioned spices, you can also add crushed coriander seeds, for an additional flavor.
