Eggless Sooji Cake

The Holiday season is all about baking. While we love getting cookies and cakes from stores, they are no where near to the ones made at home with the loved ones. Also, if you are vegetarian with no eggs in your diet, the joy of eating a pure vegetarian cake made with minimal ingredients at home will add in more joy. I tried this Eggless sooji/rava cake with ingredients that are easily available in most of the Indian pantries. Putting up this together was fun and the result was a porous, melt in mouth sooji cake with tit bits of tutti frutti that the kids enjoyed. Ingredients
  • 1 cup Sooji/Rava
  • cup Sugar
  • 1/4 cup Ghee
  • 1/2 cup Milk
  • 1/3 cup Curd
  • 1/4 tsp Cardamom Powder
  • 1/4 tsp Nutmeg Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
Instructions
  1. In a bowl, add ghee, sugar and thick curd. Mix them together.
  2. Add one cup of sooji, baking soda, baking powder, cardamom and nutmeg powder. Add half a cup of milk . Fold them together.
  3. Add a teaspoon of tutti-frooti to the cake batter. Let it sit for 5 mins.
  4. Line a pan with parchment paper. Pour in the batter. Bake at 350 F for 25 mins.
  5. Insert a tooth pick to check if its ready. cool off after removing the parchment paper. Slice and serve.
Recipe Notes

The given measurement yields a 6 inch round cake. You can alter the measurements for more quantity. Addition of tutti-frooti is optional. You can also replace it with finely chopped dry nut like almonds or pistachios.
