The Holiday season is all about baking. While we love getting cookies and cakes from stores, they are no where near to the ones made at home with the loved ones. Also, if you are vegetarian with no eggs in your diet, the joy of eating a pure vegetarian cake made with minimal ingredients at home will add in more joy. I tried this Eggless sooji/rava cake with ingredients that are easily available in most of the Indian pantries. Putting up this together was fun and the result was a porous, melt in mouth sooji cake with tit bits of tutti frutti that the kids enjoyed. We had this warm sooji cake with a cup of milk on a cold winter evening. Do try this vegetarian Sooji cake that can be made under 30 mins and enjoy with your family.
