Ragi / Finger Millet is a popularly known millet to many of us. Ragi has immense amount of goodness with it . Being rich in fibre, it helps in controlling diabetes, weightloss and help reduce cholesterol levels. Ragi is immensely rich in calcium and is a great coolant for this hot summer. From Idli, Dosas, Theplas and porridges, Ragi is consumed widely.

Being gluten free, I made this healthy Ragi Banana Cake that can be made with easily available ingredients. I have used jaggery powder to make it more healthy to avoid refined sugars. This Cake uses quarter cup of oil and yogurt making it a low calorie version. Try this very tasty Gluten Free Ragi Banana Cake and enjoy a slice with some hot cup of coffee or Tea.

Instructions

  1. Add one teaspoon of flax powder to a bowl and mix it with three teaspoons of water. Set aside for 15 mins to form a gel.
  2. In a wide bowl, add three ripe bananas, 3/4 cup of powdered jaggery, half a teaspoon of cardamom powder, quarter cup of vegetable oil. Whisk them together to form a smooth, creamy mixture.
  3. In another bowl, combine the dry ingredients together. Add one and a half cup of Ragi flour, one cup of powdered oats, half a teaspoon of salt, one teaspoon of baking powder. Combine all of them together.
  4. Combine the dry ingredients to the wet ingredients and fold them together. Add yogurt and make them into a batter.
  5. Line a parchment paper to a Cake pan. Grease them with butter or oil. Transfer the cake batter to the pan and spread. Garnish with chopped Walnuts. Tap to remove air pockets.
  6. Bake in a preheated oven at 350 F for 25 mins until done. Bring to room temperature. Slice and serve with hot coffee or tea.
