Eggless Coconut Banana Cake

Evening Tea/Coffee time is very important for many families, as it is the time every one gets back from work and school. After the early lunch and the travel back from home, a hot cup of tea/coffee with a warm cake will do good until dinner time. We love mildly sweet cakes for tea time and if you are like us, then this Banan- Coconut Cake is for you. It is made with fresh coconut, ripe bananas and whole wheat flour making them a healthy option . A Cup of hot coffee with this cake that burst with flavors is definitely a hit. Do try this cake and enjoy your relaxing cup of evening coffee /tea time.

  • Add 2 tbsp of soft butter to a bowl. To this add a quarter cup of sugar. Whisk them together to get a creamy texture.
  • Add two medium-sized ripe bananas to the butter-sugar mix. Add a quarter cup of freshly grated coconut. Combine them together.
  • Add one and a half cups of wheat flour, 3/4th tsp of baking powder. 1/2 tsp of baking soda. Fold them gently.
  • Add one cup of milk in intervals and mix them together. Grease a cake pan and line them with parchment paper. Transfer cake batter to it. Level off the top.
  • Sprinkle two teaspoons of fresh coconut and chopped walnuts. Bake at 375 F for 25-30 mins. Transfer to cooling rack. Slice and serve with tea or coffee.

Notes

  • I have used whole wheat flour to make this cake. You can mix a combination of APF/ wheat flour to do the same.
  • Ripe bananas are much sweeter and the sugar level used in this recipe is just right for us. If you are using not so ripe bananas, increase the quantity of sugar.
