CAULIFLOWER PULAV

One-Pot Meals are always easy to make for a weekday meal or for lunchbox. If they have some incredibly healthy vegetables in them, then it is a bonus making the meal a complete, wholesome one. Cauliflower is one such vegetable that has low calorie, but high in fiber. Cauliflower is also anti-oxidant rich that protects inflammation of body parts.

I made this cauliflower Pulav after seeing the recipe from a cookbook that was shared by mom. My family loves this mildly flavored Cauliflower Pulav. We pair this with some Paneer curry or Mixed vegetable Kurma. The Pulav is so flavorful, mildly spiced, and makes a wholesome meal on a busy day. Try this Cauliflower Pulav with any curry of your choice.

  • Soak one cup of Basmati rice in water for 20 mins. Cut the cauliflower to small florets and wash them in water.
  • In a wide pan, add one tablespoon of ghee and oil each. Once it is hot, add a piece of cinnamon, mustard seeds, Jeera Seeds. Let them get roasted. Add a tablespoon of Cashews and Curry leaves. Add a quarter cup of finely chopped onions with two slit green chili. Saute till they become soft. Now add one and a half cups of cauliflower.
  • Add half a teaspoon of turmeric powder, Coriander Powder, and half a cup of curd. Mix them to combine. Add soaked rice with two cups of water. Season with salt to taste along with half a teaspoon of garam masala powder.
  • Add two cups of water and cover the pan with a lid. cook in medium flame for 15 mins.
  • Fluff off the rice. Add chopped coriander leaves and grated coconut. Serve with any curry or raitha of your choice.

Notes

  • Use any long-grain variety of rice to make this pulav. You can also replace it with millets for healthier versions.
  • Do not precook the cauliflower. Remove florets and wash them in water thoroughly.
