Carrot Kesari || Navrathri Recipes

Kesari is an all-time favorite easy to make the sweet recipe. This is very popular in Tamil weddings and at home when there is an unexpected guest or even a quick sweet to satisfy the sweet cravings. My little A loves this Kesari and I remember him asking for yellow-colored Kesari during one of theĀ  India visits. The traditional Kesari is made of Sooji, Sugar, Ghee, and dry fruits. If you are a mom like me, who loves to sneak peek vegetables into the kid's diet, then this one is for you. Carrots are rich in carotenoids, which is an important one for immune health and eyesight. Ingredients
  • 0.5 cup Rava / Sooji / Semolina
  • 1 cup Carrot Pulp
  • 0.75 cup Sugar
  • 0.25 cup Ghee
  • 2 stick Cardamom
  • 1 tsp Cashews
  • 1 tsp Raisins
Instructions
  1. Heat a heavy-bottomed pan and add a tsp of Ghee to it. Roast cashews and raisins and set them aside. In the same pan, roast the Rava / sooji to a golden color.
  2. Add warm water to the roasted Rava. Mix them to avoid lump formation.
  3. Chop the carrots roughly and grind them into a fine paste with a little water. Once the Rava is cooked, add the grounded carrot.
  4. Combine the Rava and carrot and wait for the raw smell of the carrot to go off. After this, add sugar to it and combine it.
  5. Once the sugar gets dissolved and cook with Rava, add ghee to it in two intervals. Add cardamom powder for flavor. Cook the Kesari until they stop sticking to the bottom of the pan.
  6. Add roasted dry nuts to the Kesari and transfer to a serving bowl.
Recipe Notes

  • I have pureed the carrots to add to this recipe. Instead of this, you can add grated carrots too.
  • Do not use boiling water or cold water to cook Kesari. Both of them will create lumps.
  • I have used regular sugar for this recipe. You can replace it with coconut sugar and palm sugar too.
