Biscuit Payasam

Payasam and kheers are a part of many Indian festivals. Even if it is a special occasion like a Friday pooja, payasams are offered as prasadam/ offering to the deity. When there is a packet of biscuits that you are bored with eating, transform it to this Biscuit payasam in a jiffy, and enjoy a new transformed dish. You can use any variety of biscuits to make this except the savory varieties or the ones containing ajwain/ Omam. Do try this simple and easy payasam for any offerings.

  • Break the biscuits roughly into a mixer. Coarsely grind them and set aside.
  • Heat milk in a heavy-bottomed vessel until it begins to boil.
  • Once it begins to boil add sugar followed by pounded cardamom pods.
  • Allow it to boil for 2 mins. Add the coarsely powdered biscuits to the milk and stir.
  • Heat a small pan and add cashews and raisins to the Ghee. Roast them until golden brown.
  • Add the roasted cashews- raisins to the payasam and switch off the flame. Serve warm or cold. Tastes great both the ways.

Notes

  • Do not use biscuits with savory taste in it. This will spoil the payasam.
  • Do not add the biscuits to a fine powder. This will create lumps once added to the milk.
  • Adjust the sugar levels according to the sweetness of your biscuits. My biscuits were sweet enough and hence I added only one tablespoon of sugar.
  • If you like the smell of rose essence, you can add it at the end after switching off the flame.
