Maha Shivarathri is an important Hindu festival celebrated in India. During Shivarathri, people fast the entire night and also consume no-onion, no-garlic food until they break the fast. Sabudhana is one grain that is commonly consumed during fasting. Sabudhana Vada is a crispy snack made with soaked sabudhana, boiled potatoes, and peanuts. It is very mildly spiced with subtle flavors and eaten with green chutney. Some people add rice flour or any other flours that are accepted during fasting days for a binding agent. However, I have not used any of them, yet achieved a crispy snack. Try this tasty Sabudhana vada and let Lord Shiva bless everyone during this Mahashivarathri.

Instructions

  1. Boil potatoes. Soak half a cup of sabudhana in half a cup of water for 4 hours. Once sabudhana is soaked, add green chili, grated ginger, crushed peanuts, chopped coriander leaves, salt, and boiled potatoes.
  2. Mix them thoroughly with out water. Pinch out orange sized balls and pat them gently to vada. Repeat the same for the entire dough.
  3. Deep fry them in small batches on a medium flame.
  4. Cook both sides until golden brown and crisp. Drain from oil and serve with ketchup or green chutney.
